Soft sweet mouthfeel, complex acidity, & a warm boozy finish. The Black Moon process is similar to natural processing, except that the coffee rests slightly longer before being left out to dry. Some say the name comes from the coffee being harvested during a full solar eclipse. While we can’t be sure about the name’s origin, what we do know is that the process results in a deliciously clean cup.
