The Perez family have been farming coffee at La Soledad since 1895, but in the last ten years son Raul has led the charge in adapting for the specialty market, upgrading the mill on their farm and building a cupping and roasting lab to be able to learn more about improving quality at farm-level. They experiment with lots of varieties and processing methods, but this one is a classic: a washed bourbon!
