El Salvador - Las Brumas, Wild Forest Project: Pacamara, Honey

This coffee comes from a very special project on the Las Brumas farm. The owner, Ernesto Menendez (La Ilusion, Los Andes) has been growing coffee in a previously uncultivated area of forest on the farm, working with the existing ecosystem instead of clearing the land. The combination of the amazing nutrient-rich forest floor and the slower maturation due to the shade of the trees leads to an intensely sweet coffee with heightened acidity.
